Wild Lab Bakery specializes in small batch artisan goods. Perfectly imperfect bread made with the finest ingredients.
Our journey started as a licensed cottage bakery and in Feb. 2024 we opened a small bread shop storefront in the Warehouse Block in Lexington, Ky.  You can often also find us Tuesday, Wednesday, Saturday and Sunday at the Lexington and Chevy Chase Farmers Markets.
ABOUT OUR PRODUCTS
Naturally leavened sourdough bread is our specialty. Our loaves are made with locally and regionally sourced flour and a portion of our flour is milled in house using a small table top mill. Each loaf takes days to make due to the delicate fermentation process. This style of fermented bread with fresh milled flour is full of nutrients and easier to digest than store bought bread.
When food is made from scratch with good ingredients it will nourish and sustain and it tastes great!

The people and the process.

We are a family owned and operated business. Going out of your way to buy bread from us means you are providing your family with a high quality product and supporting your community in the process. Most of our flour and wheat berries are sourced from Janie's Mill in central Illinois. We love Janie's Mill because they are a 5th generation family mill that grows their own wheat using Organic practices. Their stone ground mill is carefully temperature monitored to preserve the nutrition of the kernel. We use this wheat in a leavened dough that cold ferments for 24 hours. The fermentation process is also known as "pre-digestion" because it breaks down the gluten making it easier to digest and allowing the body to absorb more nutrients.                                                                            In addition to the bread, we like to incorporate lots of fresh veggies into our menu. Almost all the vegetables used in our shop come from local farmers or our home garden. We love knowing the veggies are grown in Kentucky soil by good hardworking people. Gosh, we love farmers.
